At Tobu Hotel Levant Tokyo, we handle everything from sourcing sturgeon to harvesting caviar and finishing the Hotel ourselves, all under strict hygiene control.
The caviar is harvested from sturgeon eggs that are delivered as "live fish," as the eggs themselves are in their freshest and safest state.
Unlike caviar sold in jars and other packaging, which is seasoned with a relatively high salt concentration of 7-10%, this is Tobu Hotel unique, domestically produced, homemade caviar that offers freshness without compromising the original flavor of the ingredients, thanks to its reduced salt content of 3%.
