We cultivate pesticide-free vegetables in the plant factory inside the Verdure store.

Verdure has installed a "fully artificial light plant factory" in its store that uses only light and water to grow vegetables.
The freshly picked, high-quality, pesticide-free vegetables are full of flavor.
You can enjoy it in the buffet salads, etc.

[Chef's Recommended Dish 2]

"Candied sweet potatoes"

Daigakuimo (candied sweet potatoes) are said to have originated from a popular snack eaten in the student district around Kanda in Tokyo during the Taisho and Showa periods. (There are apparently several theories.) The sweet potatoes used as ingredients were grown in Kawagoe, Saitama Prefecture, and transported downstream on the Sumida River. It is said that dishes using sweet potatoes spread from the Asakusa area.

The broth is made using chicken bones and scallops.

It was simmered slowly over low heat for two hours.
To finish, I added some scallion oil for extra richness.

This is a flavor that our head chef is very particular about.
